Old-Fashioned Peach Cobbler

Here's a recipe sure to please! This one is just like grandma used to make and, although it's a bit involved, I can guarantee there's none better.



1/2 cup packed brown sugar
1/2 teaspoon cinnamon
1 teaspoon grated lemon or orange rind
1 tablespoon lemon juice
4 cups sliced peeled peaches
3/4 cup all-purpose flour
1/2 cup whole-wheat flour
1 tablespoon baking powder
4 cups butter or margarine
1/4 cup granulated sugar
1 egg; lightly beaten
1/2 cup milk
2 teaspoons vanilla

  • Lightly butter an 8-cup baking dish.

  • In large bowl, combine brown sugar, cinnamon, grated lemon rind and lemon juice; mix well.

  • Add peaches and toss to mix; transfer to baking dish.
  • Combine flours and baking powder.
  • In mixing bowl, cream butter and granulated sugar until light and fluffy; beat in egg.
  • Add dry ingredients alternately with milk.
  • Add vanilla, mixing just until combined.
  • Drop batter by spoonfuls over peach mixture.
  • Bake in 375ºF oven for 25 to 35 minutes or until peaches are tender and top is golden brown.
  • Serve warm.
